Breakfast cereal is a staple of many childhoods. Trying to get your parents to buy you the cool cereal with the fun and colorful box? Been there, done that! Now that Food Theory exists, I can go back and try to answer some of the questions that have haunted me since childhood. Questions like, what the heck do Apple Jacks actually taste like? They never say they taste just like apples despite it being in the name! So what flavor are they and WHY do they taste awfully close to their competition - Froot Loops? If the “Froot” flavor is just the 7 fruit flavors combined, I guess it would make sense that we can detect the different flavors… as long as we can see the color. If our mind sees red, we expect “cherry”, and since cherry is 1/7 of the flavor profile, our brain focuses on it and masks the other subtle flavors. But! With no visual clues brains to point our brain towards a certain flavor, no particular flavor will stand out and it will just taste like “froot”, which Matt seems to describe as generally a sugary, cardboard, citrus blend.

@Jacob Weatherford The red is labeled as cherry in advertisement so that's what your brain might expect to taste regardless of what the color makes you think, plus strawberry isn't one of the flavors in the 'froot' mixture of fruit loops, so your brain wouldn't be able to focus on it and mask the other flavors out.

It’s funny how sight affects taste. I own a bakery and I made a rose shaped strawberry mousse dessert for Valentine’s Day, and guests have told me that it had a subtle rose flavour, even though I added no rose. It’s likely that from sight, some flavours would seem more distinct than the other

@Hitchbot It's usually consumed as rose water and it's not exactly a contemporary flavour, so you'd best try it to get an actual feel for it.

I think you have to have eaten them as a kid to even think they’re different flavors… my parents didn’t buy me sugary cereal as a kid, so i never tried froot loops until my teens, and i can tell you i was never under any misconceptions about whether or not they were different flavors. And this is from someone that can differentiate between 49 different jelly belly flavors lol

I was like 9 when I was in the states and had fruit loops, and I realised pretty quickly that they were all the same flavor. Another note, why do american cereals taste so low quality?

Actually, I agree with the act that fruit loops are just the same flavors regardless of which color. We only get that "colorful taste" of it since we associate the colors with the fruits that has the same identical color. For example, red cereal loops are just plain cereal. But since we see the red food coloring in it, we get to think that its strawberry flavor since we associated it with that specific cereal loop. after we identify what color the cereal loop is, our taste buds reacts to that specific flavor our minds want us to think about. And thats where our mind blends with what our taste buds what flavor it wants us to imagine.

Matt, I'm surprised you didn't mention during your Fruit Loop taste trials the psychological affect that each individual loop's color plays on your perception of how it tastes, which I believe is why you were able to, as a kid, pick out the individual flavors in each loop.

I remember eating them individually as a kid while I wasnt paying attention and noticed they tasted the same. When he mentioned the orange and green ones having different flavors my immediate thought was "i thought they were the same?" my entire life I thought everyone knew this. The only difference Ive ever tasted is some of them have less flavoring.

Same! I had Froot Loops once as a kid and I tasted all of them all at once and then individually and realized they all taste the same. I also thought everyone knew too.

17:00 he got 4/15 correct... however, since Mat can't pinpoint the difference in taste between them, we can swap the labels and say that he actually got 11/15 right. p-value = 0.06 , pretty close to the 0.05 that is the usual standard threshold of evidence.

"Why are we in this alleyway" You mean Timmy's hallway? Also the blind vs visual taste test was spot on. Your eyes help you associate colors with taste, so a red loop might seem to be a cherry or strawberry when it's actually all the fruit at once. You just narrow it down with visual bias.

I remember distinctly that fruit loops had flavor. Then I moved to the US brought fruit loops the first day here for breakfast and after a huge gap of eating Indian food as breakfast I realized that they tasted like cornflakes. And the only cereal which had a fruity flavor was capn crunch's oops all berries... But again... The difference in colour meant nothing anywhere... It's just our childhood brain playing tricks

I think they should’ve done a sip of water or mouthwash as a pallet cleanser cause the guesses between Apple jacks and fruit loops was pretty spot on in the beginning. But the more they had the more their tongues probably mixed together the flavours

I knew he wouldn't be able to tell them apart once he was blindfolded 😆 That's such a common trick with food, to convince customers that there are different flavours when there really aren't. All you have to do is colour it differently, and people's brains will do the rest. Really makes you wonder how much random stuff our brains are literally just making up.

Fun fact: The Froot Loops thing can also happen with club soda (a.k.a. carbonated water) and colorings of sodas with distinctive colors (like purple is grape and green is mountain dew)

I've actually recognized the similarities of Froot Loops and Apple Jacks for a long time. I bet it's the same recipe differing only in the color and flavor.

For when it came to the different colored Froot Loops, I believe that the different flavors idea are physiological more than anything else. I think that when you look at the colors, it automatically makes you think of a certain flavor. Kinda like how we compare certain colors to emotions. And because you think of that specific flavor and all of the flavors are mixed together, your brain automatically picks those specific colors and flavors out of all the others causing you to taste different flavors.

The “I swear all the colors taste different” is a great example of priming. All the froot loops have the same flavor but the commercials have primed you to believe that the blue ones are blueberry flavored and the red are cherry flavored , etc so when you see them individually and taste them your brain is able to pick up that flavor but it’s basically impossible to discern them blind because your brain doesn’t have the colors to associate the flavors to. When it comes to ingredients being the same, two important things to remember are that the actual amount of each ingredient and how they are prepared actually matters a lot. Think of looking at an ingredients list like baking a cake without full instructions. You know from the list that one ingredient is eggs but not how many eggs will make a huge difference in the cake you end up with.

It's also possible that it's like skittles in the fact that they all taste the same, but are scented and colored differently. Which gives enough senses to our body to distinguish them

7:20 the reason you can decect different flavors in the single flavor "froot" is because of the color of the designated loop therefore causing the phantom difference in the flavor seeming like 5/6 flavors, same with skittles

Our brains connect different colors with different flavors, for example, as MatPat said: "Orange ones are Orange flavored, and Green ones are Lime flavored" so even though all the colors taste exactly the same, our brains just pick out whatever flavor it connects that color to, and make us process that one more. This is why we remember the different colors being different flavors. Because even though they're not, our brains say they are.

I really did like Apple Jacks, but then they changed the recipe (same as Fruit Loops) and the texture became more akin to sawdust. The knock-off brands are honestly better these days.

Wow this is so interesting because as a kid, I loved Apple Jacks, but I thought they tasted like cinnamon and apple. I had never had Fruit Loops at the time, so to me, Apple Jacks tasted right. This is my first time even finding out that people thought otherwise! Also Froot Loops has always tasted like every color was the same to me probably because I first had them as an adult

I think the reason froot loops taste different is because our brain has always thought they were different flavours. That way the brain is tricked into bringing out the colour that it looks like more.

As a kid in the 70s, three flavored Froot Loops (orange, cherry and lemon) was one of my favorite cereals. In the 80s they added extra colors and it tasted like crap. Don't fix what isn't broken.

The difference they are tasting is probably just the food coloring. Different amounts of dye would taste different. it could also be slight differences in the flavoring when it is mixed and poured since different amounts of flavor could stick to the bowls/machines when they are being made. Plus they make huge batches at once so instead of the difference being subtle its much stronger.

To me these “tiny” differences do a lot. It’s like how my parents used to tell me that all food in any restaurant is gonna taste the same but now they’re on a completely different side. Like how can people taste the difference between water but can’t tell the difference between a storebought chicken nugget and the nuggets from Chic’fil’a(it’s not even comparable). Also you should do blind taste test [more] often. Also weirdly enough the way you did the taste test is going to end up causing the taste to reside in the persons mouth when you move onto something else. Typically they actually rely on having a large variety of different food so the taste tester can differentiate the wildly different flavors and textures and guess what it could be not guess between two very similar things what it could be because those flavors are going to blend especially if they have the same shape and texture… except Apple Jacks weirdly enough do have a somewhat different texture from fruit loops so..

weird episode idea, but could you try tastes of different water brands? like Dasani (which is clearly the worse), Aquafina, Fiji, Life Water, Smart Water, Ozarks, etc. it really bugs me when people say water has no flavor, so I'd really like to see where you guys stand on it

Yes! I was thinking of this last night. Some waters just taste bad. Mostly the smaller brands or generic brands. Dasani and Aquafina are good.

I made chocolate cupcakes this Halloween that looked like jack o lanterns (ergo, they were orange in colour) literally EVERYONE claimed they tasted like chocolate orange. There was 0 orange flavour in them though, it made me think of this food theory 🧐

So one time I decided I was going to try making Macarons. I wanted to make them purple because they were supposed to be for my mom, but when I tried to find a flavor that would go with a purple color, the only thing I was seeing was Earl Grey tea. The attempt at macarons ended in failure so I changed everything up a little and ended up with some weird purple cookies. And when I gave them to my friends, we all came to the agreement that they tasted vaguely like Froot Loops. So that's how I figured out that Froot Loops are just a vague citrus flavor, thanks to the bergamot that makes up earl grey tea.

I suspected Froot Loop pieces were all the same flavor when I was about 6 or so. It wasn;t my favorite cereal, though. Count Chocula and Boo Berry was, which my mom refused to get me, after the first box of each, because they were candy marketed as cereal.

When I was younger I believed different colors meant different flavors and I think it’s actually our mind telling us what we are supposed to taste based on what we believe it’s meant to taste like. Exactly how when we see someone telling us what we are supposed to hear, we usually hear that (for example we usually hear lyrics differently when we don’t have the lyrics right in front of us)

This made me giggle for sure! Never in my 40+ years did I eat a blue "froot loop" and said yep blueberry. Or any color taste like any particular fruit, just sugar. In my opinion. Apple jacks flavorless to a point also.

Fruit loops might have the same mind games as skittles as they all have the same taste but because normally sweets have different tastes for specific colours, which makes you think they taste different but they really don’t at all

I never knew that ingredients are listed by amount found...that explains a lot! I have a soy allergy. It makes my throat swell up. Not to a life threatening degree, but enough to be extremely uncomfortable for a little while, maybe an hour or two. A lot of foods have soybean oil listed as an ingredient, but I don't always have the reaction. I can eat ice cream, Cheez-itz, and other stuff just fine. But I can't have some stuff like mayo that has a LOT of soybean oil in it. Makes me sad because I LOVE deviled eggs. But it all makes sense now, because on most mayonnaise I've seen soybean oil is the first ingredient. You're eating basically a soy spread and I really hate it. At least things make sense now.
