Fun fact. My Dad used to work at KFC years ago when he was a teen. And stole some of the spice mixed flour to make some chicken at home. AND IT DIDNT TASTE LIKE THE CHICKEN FROM KFC. So I think the pressure cooker and possibly the oil is the main issue.

ya, a master chef buddy also worked at a KFC years ago and mentioned that 'all the spices were not as important as the pressure cooking.' Salt/pepper though are important. The whole issue nearly drives me to drink.

I’m not surprised the citric acid made the 99-X taste more similar to KFC. Citrus is such a great chicken additive that definitely improves the flavor especially when fried/baked.

As someone who’s favourite seasoning is pepper I can’t imagine not being allowed to have pepper at home. I literally buy pepper by the pound and go through it in a month or two tops. I wanna know what happened with pepper to cause this. The curiosity is immense.

Plus buttermilk with 2 eggs instead of regular milk for the wet soak. Plus 100g of dried milk and 100g of dried egg in the breading like other commenters said. I also think the pressure fryer plays more of a role than people think and does something beyond reducing cooking times. Double 99x + 100g dried milk + 100g dried egg + 50% extra salt + tellicherry pepper + dredge in buttermilk and egg mixture before breading + pressure fryer + citric acid in the oil = perfect fried chicken? 🤔🤔 "It's the little things that matter"

As a KFC employee, I can confirm that 99x looks right. The proportions are approximately 11kgs flour to 400g seasoning and 400g salt, with 100g of dried milk and egg mix

Actually on the fruit bit, it's not as unlikely as one might think. A bit of citrus zest or juice can add to certain flavor combinations, or help you power through something that is extra greasy. Did Ollie get any fried Chicken?

​@@Natp69The story as I know it goes like this: Harland Sanders wanted to give people fried chicken at his bussiness (I think it was a gas station, though I'm not too sure), but chicken takes a long time to fry normally, and if he just prepared some, he could end up having only hours-old chicken to serve. Now, there were plenty of pressure COOKERS already, but in order to use it to fry something, he had to reconfigure it so it could stand up to the higher temperatures - especially the seals, which he had to replace with metal ones. This took quite a bit of trial and error on his part, and once it was working, he still had to work out the propper time and temperature to fry the chicken, as well as the propper batter to coat the chicken in. So yeah, I wouldn't say it's too much of a stretch to say he invented it.

after working in the food industry and supplying the breading to local KFC 's after reciving the wrong breading on one occasion the blowback was instinctanous with the threat of losing the contract to supply them unless the right product was replaced . it was the supplyers fault not ours so we managed to save the contract but found out that the kfc recipe is based on location not the same for everyone

I don't know if it's normal everywhere else to marinate their chicken with citrus among others, but it is REALLY GOOD, try it sometime, it gives a faint lick of delicious and juicy sweetness to your chicken!! We marinate the chicken a little with a little salt and pepper with citrus (calamansi, specifically) and then we cover it with generally any kind of coating you may want to use after an hour at least of marinating. It's great if you know your ingredients well!

I used to work at McDonald's. Mac Sauce and Thousand Islands dressing consist of very very different ingredients. Taste them side by side and you'll notice the much tangier taste of Mac Sauce.

I worked on a marketing campaign for KFC and I can say if citrus was the missing component, it was a complete accident. They took us on a tour of the facilities so we’d know a bit more about the company and explained that only 1 person in the entire world knows the recipe. And to get to the recipe you need 3 people to unlock the vault. So if the citrus is the answer, that was just a happy coincident.

From the kfc Taino g videos they just use water and coat the chicken twice. Doesn’t seem very appealing but that’s what’s in the video.

here's my food theory: the last recipe you tried with the citrus added to it is the true recipe, BUT because it was made in a small kitchen deep fryer instead of an industrial sized pressure fryer it was slightly different. The other reason behind it tasting different is because KFC is made by sweaty teenagers in a rushed environment that isn't always so clean just gives the chicken that extra oomph that it has.

I remember a friend of mine from America came over to visit me (I live in Scotland), and their favourite thing to do was to eat at fast food restaurants because they're allergic to soy, and we don't use soy oil over here! To elaborate, in the UK, we use vegetable oil, sunflower seed oil, or just plain old butter to fry things as its harder to get soy over here.

Heres my idea, for an easier analysation of the spice mix use the walkers max kfc chicken flavor which apparently uses the original recipe spices, (ik obscure) and get as much of the seasoning off as u can, then analyse that

I think there could be a lot of variables with your fried chicken recipes but the main one is that they use a pressure fryer to cook all their chicken and it cooks for a much shorter time and I worked there when I was in high school and I know for a fact that the chicken comes in brine to KFC in a salt or maybe MSG solution in a bag they don't use buttermilk or anything along those lines to dredge the chicken it's all dredged in that liquid that comes in the bag with the chicken and water if it's extra crispy for the second dip in the flour.

The citrus could also be part of the brine. Buttermilk is fairly acidic, add a little lemon and the chicken is great, moist and tender

I have the same reaction every time I hear someone saying paprika, cause it’s spelled the exact same way as Swedish, my native language, but the, with lack for a better word, exaggerated letters are completely different. It’s a lot like Michael, in Swedish Michael is almost pronounced Me-kah-el, with kah being exaggerated

I wonder what would happen if you did use tsp and a skim milk wash with the nephew’s recipe. Usually uppercase T would be tablespoons but if it’s handwritten by an old lady, it could just be a handwriting thing. They mentioned that it seemed like too much spice for the amount of flour so I’m curious if that’s why.

You should make another batch of chicken using the Colonel's nephew's recipe but use teaspoons rather than tablespoons. It is very unusual for a whole recipe to be in tablespoons.

So fun fact from someone who has worked at multiple kfcs in the US at least the extra crispy is cooked in an open vat deep fryer while the original breading is cooked in a pressure fryer and they're two different types of breading

Yeah... I didn't pay much attention to the actual seasonings used but I do know the chicken was dipped in water and then dropped in the flour + seasoning mix (and then dip the already flour covered chicken in the water again and then in the flour again, for extra crispy) back when I worked as a cook there. Definitely a lot of pepper in the recipe though...

Can i just say a year ago when this video came out, i hadnt eaten KFC for 5 years, and when i watched all the KFC videos on the other channels too including this one, i asked my parents if we could have KFC for dinner after 5 years. Spoiler: KFC in Australia is not crunchy and i haven’t had it in a year since then-

1.Mix the flour in a bowl with all the herbs and spices; set aside. 2.Mix the buttermilk and egg together in a separate bowl until combined. Soak the chicken in the buttermilk mixture at room temperature, 20-30 minutes. 3.Remove chicken from the buttermilk, allowing excess to drip off. Dip the chicken pieces in the herb-spice-flour mixture to coat all sides, shaking off excess. Allow to sit on a rack over a baking sheet, 20 minutes. 4.Meanwhile, heat about 3 inches of the oil in a large Dutch oven (or similar heavy pot with high sides) over medium-high heat to 350 degrees. (Use a deep-frying thermometer to check the temperature.) When temperature is reached, lower the heat to medium to maintain it at 350. Fry 3 or 4 pieces at a time, being careful not to crowd the pot. Fry until medium golden brown, turning once, 15-18 minutes. Transfer chicken pieces to a baking sheet covered with paper towels. Allow the oil to return to temperature before adding more chicken. Repeat with remaining chicken.

Secret with the Citrus is to Bath the raw chicken in Lemon/Lime juice before the first flour coating stage. The OG recipe is from his Wife legit sans MSG. Col.Sanders was from the South, AKA Florida. Not Kentucky. He may have also fried in Peanut Oil and or Crisco cotton seed oil given his a OG location. Also Consider adding a pinch of Sugar witch is the secret to Chinese food along with MSG. Baking soda may be added for a crispy texture.

The only difference between KFC's original chicken and extra crispy chicken is that they don't fry the extra crispy under pressure, so it ends really crispy like yours.

It's also brined overnight in a buttermilk mixture. Buttermilk is as easy to make as adding some fresh lemon juice to milk, and letting the chicken sit in that overnight. Probably could get the same results plus a more tender chicken that way. Also thinking they may add baking powder to the flour as well, the combination of the acidity would help the batter fluff up more light and crispy like fish batter.

The secret with flavor isn't in just the breading, you have to marinate the chicken then bread with spices. The chicken has to have flavor or all your going to get is good fried skin or coating, and plain chicken flavor.

I noticed in some of the recipes they used paprika. As someone who has hungarian parents, I can say that more pricey hungarian flour tastes much better than cheaper more orange paprika. In some of the recipies, if they used paprika, it could be hungarian or other paprika.

I was born in the county where KFC started. I used to like it but now its just to dry around here and the chicken doesn't taste great anymore. I'm quite glad to see this theory though maybe I can make my own chicken to snack on that doesn't give me heartburn.

I'm certainly not old enough to remember the ORIGINAL-original recipe, but I AM old enough to remember it in the early '70s and I can absolutely confirm that it does not taste the same now as it did back then. My best guess is that it's largely due to the change in oil, but they've probably fiddled with the seasoning some too in the past 50 years or so.

Hey Matt, I used to work for a poultry processing plant, that prepared the KFC brand chicken. A lot of the seasoning is injected in the chicken pieces at the processing plant. Similar to a brine.
